Sindhi Singhyu Patata: Where Nostalgia Meets Culinary Excellence


 Sindhi Singhyu Patata is a traditional and flavorsome dish from the Sindhi cuisine, which originates from the Sindh region of Pakistan. It is a simple yet hearty preparation that combines two key ingredients: singhyu (drumstick pods) and aloo (potatoes). The dish is known for its unique taste, delightful blend of spices, and wholesome appeal.

Ingredients for preparation:
  • 2 medium-sized potatoes, peeled and cut into thin slices
  • 1 cup fresh or frozen drumstick pods (singhyu), cut into 2-inch pieces
  • 1 medium-sized onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1 teaspoon ginger-garlic paste
  • 2 tablespoons cooking oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions for cooking:
  • Heat oil in a deep skillet or kadhai over medium heat.
  • Add cumin seeds and mustard seeds. When they start spluttering, add asafoetida (hing) and sauté for a few seconds.
  • Add chopped onions and green chilies. Sauté until the onions turn translucent and slightly golden.
  • Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
  • Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the mixture.
  • Add the drumstick (singhyu) pieces to the masala and mix well. Cover the skillet and let it cook on low heat for about 5-7 minutes until the drumsticks are partially cooked.
  • Now, add the sliced potatoes and mix them gently with the masala and drumsticks.
  • Cover the skillet again and let it cook on low heat until both the potatoes and drumsticks are tender and fully cooked. You may need to stir occasionally to ensure even cooking.
  • Once the potatoes and drumsticks are cooked, check the seasoning and adjust salt and spice according to your taste.
  • Garnish with freshly chopped coriander leaves.
