Delightful Malpua: Discover the Joy of Creating this Sweet Pancake Delicacy




Malpua is a traditional Indian dessert that is popularly served during festivals and special occasions. It is a sweet pancake-like dish made from a batter of all-purpose flour, milk, and sugar. Here's a basic recipe to make Malpua:


Ingredients:
  • 1 cup all-purpose flour
  • 1/4 cup semolina
  • 1/2 cup condensed milk
  • 1/2 cup milk
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Ghee or oil for frying
  • Chopped nuts (like almonds, pistachios) for garnishing
  • Sugar syrup (made from 1 cup sugar and 1 cup water, boiled together until syrupy)
Instructions:
  • In a bowl, mix all-purpose flour, semolina, condensed milk, and milk to make a smooth batter. The batter should be thicker than regular pancake batter.
  • Add cardamom powder and saffron strands to the batter. Mix well and let it rest for 15-20 minutes.
  • Heat ghee or oil in a shallow pan or griddle over medium heat.
  • Pour a ladleful of batter onto the hot pan to make small pancake shapes. You can make them as small or large as you like.
  • Fry the malpua until they turn golden brown and crispy on both sides. It will take a few minutes for each side. Make sure the heat is medium-low to prevent burning.
  • Once the malpua is cooked, remove it from the pan and drain excess oil.
  • Dip the malpua in the sugar syrup for a few seconds, making sure it is coated well. Take it out of the syrup and place it on a serving plate.
  • Repeat the process with the remaining batter to make more malpuas.
  • Garnish the malpuas with chopped nuts like almonds and pistachios.
