Ingredients:
- 1 cup all-purpose flour
- 1/4 cup semolina
- 1/2 cup condensed milk
- 1/2 cup milk
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Ghee or oil for frying
- Chopped nuts (like almonds, pistachios) for garnishing
- Sugar syrup (made from 1 cup sugar and 1 cup water, boiled together until syrupy)
- In a bowl, mix all-purpose flour, semolina, condensed milk, and milk to make a smooth batter. The batter should be thicker than regular pancake batter.
- Add cardamom powder and saffron strands to the batter. Mix well and let it rest for 15-20 minutes.
- Heat ghee or oil in a shallow pan or griddle over medium heat.
- Pour a ladleful of batter onto the hot pan to make small pancake shapes. You can make them as small or large as you like.
- Fry the malpua until they turn golden brown and crispy on both sides. It will take a few minutes for each side. Make sure the heat is medium-low to prevent burning.
- Once the malpua is cooked, remove it from the pan and drain excess oil.
- Dip the malpua in the sugar syrup for a few seconds, making sure it is coated well. Take it out of the syrup and place it on a serving plate.
- Repeat the process with the remaining batter to make more malpuas.
- Garnish the malpuas with chopped nuts like almonds and pistachios.
