Authentic Sindhi Koki: A Taste of Tradition and Warmth"

Sindhi Koki is a popular traditional Sindhi flatbread that is typically made with wheat flour, onions, and spices. It is a delicious and easy-to-make recipe. Here's a simple guide on how to cook Sindhi Koki:

Ingredients:

  • 2 cups whole wheat flour
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water, as needed
  • Ghee or oil for cooking

Instructions:

  • In a big bowl, mix together wheat flour, chopped onion, green chilies, coriander leaves, cumin seeds, carom seeds, red chili powder, turmeric powder, and salt.
  • Gradually add water and knead the mixture into a soft dough. Adjust the water as needed. The dough should be firm and not too sticky.
  • Divide the dough into small lemon-sized balls. Take one ball and flatten it with your hands to make a disc shape.
  • Dust the flattened dough with some wheat flour and gently roll it out with a rolling pin. Roll it into a circular shape, similar to a paratha, but slightly thicker.
  • Heat a flat griddle or tawa over medium heat. Place the rolled Koki on the heated tawa.
  • Cook one side of the Koki until small brown spots appear, then flip it over and cook the other side. Apply some ghee or oil on both sides while cooking for a crispy and golden brown texture.
  • Repeat the process with the remaining dough balls, rolling and cooking them one by one.
  • Once cooked on both sides and golden brown, remove the Koki from the tawa and place it on a plate.
  • Serve the Sindhi Koki hot with yogurt, pickle, or any curry of your choice. It can be enjoyed as a breakfast dish or snack.
