Sindhi Seyal Phulka: A Lip-Smacking Dish from the Heart of Sindh


Sindhi Seyal Phulka is a traditional Sindhi dish that combines the flavors of spices and bread. It is a popular recipe in the Sindhi cuisine, which originates from the Sindh region of Pakistan and is also widely enjoyed in parts of India.

Ingredients for preparation:
  • 4-5 phulkas (Indian bread)
  • 2 medium-sized onions, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • Cooking oil
Instructions for cooking:
  • Heat some oil in a pan or kadhai over medium heat. Add cumin seeds and let them splutter. Then add a pinch of asafoetida (hing) and stir for a few seconds
  • Add the finely chopped onions to the pan and sauté them until they turn golden brown
  • Next, add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell of ginger-garlic disappears
  • Add the chopped tomatoes to the pan and cook until they become soft and mushy
  • Now, add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes
  • Break the phulkas into bite-sized pieces and add them to the pan. Gently mix everything so that the masala coats the phulkas evenly
  • Sprinkle some water over the phulkas and cover the pan. Allow it to cook for 5-7 minutes on low heat. The phulkas will absorb the flavors of the masala
  • After 5-7 minutes, remove the lid and give it a gentle mix. Check the consistency and adjust the water as per your preference. If it appears too dry, you can sprinkle a little more water
  • Finally, sprinkle garam masala over the dish and give it a final mix. Cook for another minute or two
  • Garnish with fresh coriander leaves
