Sindhi Besan Bassar is a popular and flavorful dish made with chickpea flour (besan) and a variety of spices. It's a common preparation in Sindhi cuisine and often served with steamed rice or bread. Here's how you can cook Sindhi Besan Bassar Sabji:

Ingredients for preparation:
  • For Besan Mixture:1 cup chickpea flour (besan)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Water, as needed
Ingredients for Sabji preparation :
  • 2 large onions, thinly sliced
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2-3 garlic cloves, minced
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds (methi seeds)
  • 1/4 teaspoon asafoetida (hing)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • Fresh coriander leaves, chopped (for garnish)
  • Water, as needed
  • Salt to taste

Instructions for cooking :

  • Prepare the Besan Mixture:In a bowl, mix chickpea flour, turmeric powder, red chili powder, and salt.
  • Gradually add water while whisking to form a smooth batter. The consistency should be like that of pancake batter. Set this aside.
  • Cook the Besan Mixture:In a pan, heat oil and add cumin seeds, mustard seeds, fenugreek seeds, and asafoetida. Let them splutter.
  • Add the sliced onions and green chilies. Sauté until the onions become soft and translucent.
  • Add minced garlic and sauté for another minute.
  • Lower the heat and add the prepared besan mixture to the pan. Stir continuously to avoid lumps from forming.
  • Cook the besan mixture on low heat, stirring constantly until it thickens and the raw smell of besan disappears. This may take around 10-15 minutes.
  • Add water as needed to maintain the desired consistency. The mixture should be thick yet pourable.
  • Season with salt, coriander powder, cumin powder, and garam masala. Mix well.

Serve it ready:
  • Garnish the Besan Bassar with chopped coriander leaves.
  • Serve it hot with steamed rice or any Indian bread like roti or phulka.
