Ingredients for preparation :
- 1/2 cup basmati rice
- 4 cups milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Chopped nuts (such as almonds, pistachios) for garnish
- Raisins for garnish
- Rose petals for garnish (optional)
Instructions for cooking:
- Wash the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, bring the milk to a boil over medium heat. Stir occasionally.
- Add the soaked and drained rice to the boiling milk. Cook on medium-low heat, stirring occasionally, until the rice becomes soft and the milk thickens (about 30-40 minutes).
- Once the rice is cooked and the milk has thickened, add the sugar, cardamom powder, and saffron strands (if using). Stir well until the sugar dissolves completely.
- Remove the pot from the heat and let the kheer cool to room temperature. It will thicken further as it cools.
- Transfer the kheer to serving bowls and garnish with chopped nuts, raisins, and rose petals if desired.
- You can serve the kheer chilled or at room temperature. If you prefer it chilled, refrigerate it for a few hours before serving.
