Savoring Sindhi Cuisine: Tidhali Daal and Dodho Made Easy



Sindhi Tidhali Daal and Dodho are traditional dishes from the Sindh region of Pakistan. Tidhali Daal is a flavorful lentil dish, and Dodho is a type of unleavened bread made with wheat flour. Here are the recipes for both:

Sindhi Tidhali Daal:

Ingredients for preparation :
  • 1 cup split pigeon peas (toor dal)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • Pinch of asafoetida (hing)
  • 1 tablespoon tamarind pulp
  • 2 tablespoons vegetable oil or ghee
  • Salt to taste
  • Fresh coriander leaves (optional)

Instructions for cooking :
  • Wash the split pigeon peas (toor dal) under running water until clean.
  • Cook the dal in a pot or pressure cooker with 3 cups of water until soft and well-cooked.
  • In a separate pan, heat oil or ghee. Add cumin seeds and mustard seeds. Let them sizzle.
  • Add chopped onions, minced garlic, grated ginger, and green chilies to the pan. Cook until onions turn soft.
  • Add chopped tomatoes and cook until they become mushy.
  • Mix in turmeric powder, tamarind pulp, and salt. Stir well.
  • Add the cooked dal to the pan and simmer for a few minutes. Adjust the consistency with water if needed.
  • Garnish with fresh coriander leaves (if available) and serve hot with Dodho or rice.

Sindhi Dodho:


Ingredients for preparation:
  • 2 cups wheat flour
  • Water, as needed
  • Salt to taste
  • Ghee or vegetable oil, for cooking
Instructions for cooking :
  • In a big bowl, mix wheat flour and salt.
  • Gradually add water and knead the flour into a soft and smooth dough.
  • Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  • Take small portions of the dough and flatten them with your hands to form round bread (about 5-6 inches in diameter).
  • Heat a griddle or tawa over medium heat and cook the bread on both sides, using ghee or oil, until golden brown and slightly crispy.
  • Repeat the process for all the dough portions to make more bread.
  • Serve the hot Dodho with Sindhi Tidhali Daal or any other side dish you like.
