Seyal Bhaji is known for its simplicity and versatility. It can be enjoyed as a main course dish with roti (Indian bread) or rice, and it can also be served as a side dish alongside other Sindhi delicacies. Ingredients for making:
- 2 cups mixed vegetables (carrots, peas, beans, potatoes, etc.)
- 2 medium-sized onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 2 teaspoons ginger-garlic paste (a mixture of crushed ginger and garlic)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust according to your spice preference)
- 1/2 teaspoon garam masala (a blend of spices)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 2 tablespoons oil
Instructions for cooking:
- Heat oil in a pan or kadhai on medium heat.
- Add cumin seeds and let them crackle.
- Add finely chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell goes away.
- Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
- Add the mixed vegetables and mix everything together. Cover the pan and cook for about 10-15 minutes until the vegetables are tender, stirring occasionally. If needed, you can add a little water to prevent sticking.
- Once the vegetables are cooked, sprinkle garam masala and mix well. Cook for another 2-3 minutes.
- Remove from heat and garnish with freshly chopped coriander leaves.
- Serve Sindhi Seyal Bhaji hot with roti or rice.
