Spices and Goodness Combined: Seyal Bhaji, a Sindhi Classic




Seyal Bhaji is a popular Sindhi dish from the Indian subcontinent. It is a flavorful vegetable dish cooked with a combination of spices and typically includes a mix of vegetables like carrots, peas, beans, and potatoes. The term "Seyal" refers to the cooking technique used in this dish.

Seyal Bhaji is known for its simplicity and versatility. It can be enjoyed as a main course dish with roti (Indian bread) or rice, and it can also be served as a side dish alongside other Sindhi delicacies. The use of spices like cumin seeds, coriander powder, turmeric powder, and red chili powder adds a depth of flavor to the dish.

Ingredients for making:
  • 2 cups mixed vegetables (carrots, peas, beans, potatoes, etc.)
  • 2 medium-sized onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit lengthwise
  • 2 teaspoons ginger-garlic paste (a mixture of crushed ginger and garlic)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • 1/2 teaspoon garam masala (a blend of spices)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • 2 tablespoons oil

Instructions for cooking:
  • Heat oil in a pan or kadhai on medium heat.
  • Add cumin seeds and let them crackle.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and sauté for a minute until the raw smell goes away.
  • Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft.
  • Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
  • Add the mixed vegetables and mix everything together. Cover the pan and cook for about 10-15 minutes until the vegetables are tender, stirring occasionally. If needed, you can add a little water to prevent sticking.
  • Once the vegetables are cooked, sprinkle garam masala and mix well. Cook for another 2-3 minutes.
  • Remove from heat and garnish with freshly chopped coriander leaves.
  • Serve Sindhi Seyal Bhaji hot with roti or rice.
